Rasmalai is a vibrant India dessert originated from the eastern part of India. The rasmalai recipe is a very famous and straightforward recipe to make. The rasamalai is available in three types all around India. in some parts like in Dhaka and Rangpur, it is seen that the rasmailai has the same shape as of the rasgulla.

Types of Rasmalai

The rasmalai is made with many different ingredients in different parts of India. There are mainly three kinds of rasmalai recipe available in India. They are as follows:

1. Original rasmalai: The original rasmalai is made by the round chhana balls soaked in milk and malai and deliciously flavored by cardamom. First, the milk is boiled, and the lemon juice or a little bit of vinegar is added to the milk. This helps to split the milk, and milk solids are formed; it is drained, and the solid formed it none other than the chhana. Then the chhana is made round balls, and the sumptuous rasmalai is made.

2. Kesar rasmalai: The recipe of Kesar rasmalai is a bit the same as the original rasmalai. The change is made in the same way the milk is boiled, and lemon juice is added to the solid formed, and then the water present in the chhana is drained. The chhana is fried a little, and then in the syrup of malai and cardamom, Kesar milk is added, which gives a very delicious taste of the rasmalai.
 
3. Sugar-free rasmalai: In the sugar-free rasmalai is the same as the original rasmalai, but instead of sugar, people add sugar-free tablets or some like to jaggery. The chhana balls are dipped into the sugar-free syrup, thus making the content of sweet very low. It is mainly made for the people who love to have sweets but are suffering from diabetes.

All the rasmalai recipe are very good for one’s health. The milk in rasmalai is very nutritious, and if Kesar is added to the milk, then the rasmalai tastes heavenly. Rasmalai is regarded as the healthiest dessert in India. Rasmalai always has been one of the most favorite deserts of India.
